This recipe makes around 3 dozen muffins in a standard sized muffin tin.
They are super easy and super cheap to make.
Take them straight from freezer to lunchbox!
Apple Bran Muffins
Servings 3 dozen
Ingredients
Dry Ingredients
- 1 cup Brown Sugar
- 2 1/2 cups Rolled Oats
- 1/2 teaspoon Salt
- 1 1/2 cups Bran
- 1 1/2 teaspoon Baking Soda
Wet Ingredients
- 1/2 cup Golden Syrup
- 2 tablespoons White Vinegar
- 2 cups Milk
- 1 cup Boiling Water
- 2 Eggs
Fruit
- 1 cup Apple (chopped or stewed) OR
- 1 cup Sultanas
Instructions
- Preheat oven to 220°C
- Mix wet ingredients
- Mix dry ingredients
- Add the two mixes together along with the eggs and stir until well blended
- Add fruit of your choice and mix well
- Bake for 10-12 minutes
- When cooked a muffin should spring back when poked
