Apple Bran Muffins

This recipe makes around 3 dozen muffins in a standard sized muffin tin.

They are super easy and super cheap to make.

Take them straight from freezer to lunchbox!

Apple Bran Muffins

Prep Time 15 minutes
Cook Time 10 minutes
Total Time 25 minutes
Servings 3 dozen

Ingredients

Dry Ingredients

  • 1 cup Brown Sugar
  • 2 1/2 cups Rolled Oats
  • 1/2 teaspoon Salt
  • 1 1/2 cups Bran
  • 1 1/2 teaspoon Baking Soda

Wet Ingredients

  • 1/2 cup Golden Syrup
  • 2 tablespoons White Vinegar
  • 2 cups Milk
  • 1 cup Boiling Water
  • 2 Eggs

Fruit

  • 1 cup Apple (chopped or stewed) OR
  • 1 cup Sultanas

Instructions

  • Preheat oven to 220°C
  • Mix wet ingredients
  • Mix dry ingredients
  • Add the two mixes together along with the eggs and stir until well blended
  • Add fruit of your choice and mix well
  • Bake for 10-12 minutes
  • When cooked a muffin should spring back when poked
