Courgette Bread


Cream eggs and sugar, slowly add oil, mix in vanilla and treacle.

In a separate large bowl: sift flour, baking powder and spices, mix in zucchini and walnuts.

Combine liquid mix into dry mix.

Spoon into greased loaf tins (2 medium)

Bake approx. 1 hour at 180c until skewer comes out clean. Cool on rack

  • 1 cup Brown Sugar
  • 1 cup cooking oil
  • 1 tsp Vanilla
  • 4 cups Zucchini grated - approximately 2 large zucchini a bit more works fine
  • 1 Tbs Treacle
  • 4 cups Flour Spelt or Wholemeal works well
  • 3 tsp Baking Powder
  • 2 tsp Cinnamon
  • 1 tsp Allspice
  • 1 cup Walnuts Chopped
  • 4 Eggs
