Courgette Pickle
Servings 3 500g jars
Ingredients
- 1 large Onion
- 12-16 small Courgettes
- 1/4 cup Salt
- 2 cups Vinegar white or cider
- 1 cup Sugar
- 1 teaspoon Turmeric
- 1 teaspoon Mustard Seeds more or less to taste
- 1 teaspoon Celery Seeds
Instructions
- Slice courgettes and onions finely and place in a bowl with salt
- Cover and leave overnigh
- Drain the vegetables
- Bring rest of ingredients to boil then add vegetables and cook for 15 minutes
- Pack into jars, cover with vinegar mix and seal.
