Courgette Pickle

Servings 3 500g jars

Ingredients

  • 1 large Onion
  • 12-16 small Courgettes
  • 1/4 cup Salt
  • 2 cups Vinegar white or cider
  • 1 cup Sugar
  • 1 teaspoon Turmeric
  • 1 teaspoon Mustard Seeds more or less to taste
  • 1 teaspoon Celery Seeds

Instructions

  • Slice courgettes and onions finely and place in a bowl with salt
  • Cover and leave overnigh
  • Drain the vegetables
  • Bring rest of ingredients to boil then add vegetables and cook for 15 minutes
  • Pack into jars, cover with vinegar mix and seal.
