Tomato Sauce

  • 2.5 kg Tomatoes chopped
  • 2 Apples Granny Smith or similar
  • 1.5 cups Vinegar White or Malt
  • 1 Capsicum chopped
  • 4 cloves Garlic peeling and chopped
  • 1 ¼ cups Sugar
  • ½ teaspoon Ground White Pepper
  • 1 tablespoon Salt
  • ½ teaspoon Ground Cloves
  • 1 tablespoon Smoked Paprika
  • 1 tablespoon Ginger
  • Chili to taste


  • Place all ingredients in large pot and slowly bring to boil
  • Simmer 2 - 2.5 hours until thick
  • Cool and blend with stick blender
  • Return to heat and once hot pour into hot sterilised bottles
  • Store in a cool dark place. Sauce is better after it has matured for at least two months.


My goto tomato sauce recipe.  Simple to make and delicious.
Can be made without chili, or with for a flavour zing.  (I love food that fights back!)
